Foodie: Ginataang Salmon

We've been staying up late since Monday, kaya after dinner tonight we found ourselves sleeping in the sala, kaya gising na gising kami ngayon and I have time to post this not so new recipe, alam nyo naman ako basta may coconut milk na ulam masarap for me, sa ulam kasi I like it better yung ma sauce na iga, si mark naman mahilig sya sa mga nilaga at sinigang basta ung may sabaw. No pork policy pa din kami kaya I think of other ways how to cook salmon or fish, kasi before mag fishing si Mark ang almost available lang sa supermarket ay salmon, kaya kungdi fried salmon e sinigang na salmon ang ulam namin. We've been craving pork na pero stick pa din kami sa rule, so instead of bicol express, I cooked this ginataang salmon, kasing sarap pero healthier, o diba diba,, =)



Ingredients:

Salmon cut into small
coconut milk
siling haba
eggplant
salt and pepper
sugar
garlic
vinegar
olive oil/or any cooking oil

How to cook:

First, seasoned the salmon with salt and pepper, fry it (para hindi masyadong malansa) then set aside.
In a new pan, saute the garlic and the chili (siling haba) in olive oil, put the coconut milk and let it boil for a few minutes, add salt and pepper, put the eggplant and let it cook, add the vinegar and sugar ( i like medyo spicy na matamis e) let it simmer until the sauce is thick, now you can add the fried salmon,,, and voila you have a super yummy and healthy easy-peasy meal.
