Merry Christmas

It's official, my vacation starts today! yahoo! We've been very busy buying gifts for our loved ones in the Philippines in the past few days, kinda late for Christmas shopping, not new to me coz I am always cramming hahaha!!!
3 Christmases away from home and we're very happy that this year we'll be able to celebrate Christmas with our families and friends.
Christmas is all about love, family and thanksgiving, may we all be humble and may we have a forgiving heart not just for the season but for always.
Merry Christmas to all!!! Let's celebrate the birth of our Lord Jesus with a cheerful heart!

Our Ultimate Wish for 2011

2010 brought so much happiness to us, we had a very successful wedding, thank God. Last year that was our ultimate wish, I remember Mark was telling me when we were welcoming the New Year at marina bay where all the balloons were floating with all the wishes written, he wrote his wish online.
Last friday is our last monthsary for this year, and we passed by to this booth wherein you will write your wish on the balloon, and here what hubby wrote:




He is very specific on his wish "A BABY GIRL" hehehe!!! Please help us pray for that. =)

Dinner : Pininyahang Manok

I took a medical leave today, I went to my appointment in Raffles Hospital, all is well, the results are all ok (thank God). While on my way home I was thinking of what to cook for dinner since I will reach home early I decided to cook pininyahan manok.




Ingredients:

Chicken Drumlets (may nabibili kasi dito puro drumlets lang, i decided to use this part para hindi na ako maggagayat hehehe)

1 whole garlic, chopped (ung normal may onion dapat pero nasanay na ako sa lahat ng luto ko na walang onion ayaw kasi ni Mark nun)

2 tbsp olive oil

2 medium size potatoes, peeled and quartered (can be smaller)

1 medium size carrots

1 red bell pepper

2 tbsp patis (fish sauce) depende sa panalat nyo

dash of pepper (depende din sa taste nyo)

2 tbsp pickles

1 can (500g) pineapple chunks in syrup

1 can evaporated milk

1/2 cup grated cheese

Procedure:

Heat a pan and when it’s hot, put olive oil. Saute garlic until golden brown.
Add the chicken and saute for about a minute, then add patis (add more depending on your taste). Mix then add pepper and pickles. Simmer then cover. Juices will start to come out. Wait until chicken is half cooked then add the pineapple syrup, simmer until the chicken is cooked para maglasa sa chicken yung pineapple syrup. When chicken is cooked, add carrots and potatoes. Simmer until the vegetables are cooked.Add the bell pepper, then stir and bring back to a boil. Add the milk then the cheese until melted. Served with rice and a smile. Enjoy!

My hubby loved it, nakakawala daw ng pagod. =)
